BLACK VIN. REDUCTION

 

Ingredients:

4 cups        Red Wine Vinegar

1.5 cups     Brown Sugar, dark, well packed

3/4 cup      Raisins

Procedure:

1. Stir vinegar and brown sugar in a sauce pot. Bring to a boil, reduce to a simmer and allow to simmer until reduced by 2.5 cups.

 

2. Chop coarsely and add raisins.

 

3. Continue simmering until the whole thing is reduced to 2 cups.

 

4. Finished reduction should be glossy, thick, black and sexy.
