BRAISED CABBAGE w/APPLES
1 Ham, fully cooked with the bone in, apx. 12#
6 oz. Brown Sugar
1/2 tsp. Cloves, ground
1 pt. Pineapple, crushed in its juice
8 fl. oz. Bourbon
8 oz. Orange Marmalade
1. Shred cabbage.
2. Render bacon and sweat onions in the fat until tender.
3. Add cabbage and continue to saute for about 5 minutes. Add wine, stock, cinnamon stick and season to taste with salt, pepper and nutmeg. Cover and braise for about 20 minutes, till almost tender.
4. Add apples, brown sugar and vinegar....mix well.
5. Cover and braise for another 5 minutes or so, until apples are tender. Remove cinnamon stick and serve.
