4 oz. Mushrooms, sliced
1/2 oz. Shallots, small dice
8 fl. oz. White Wine
1 qt. Demi-Glace
6 oz. Tomatoes, diced
1. Sauté mushrooms and shallots in butter for a minute or two then add the shallots.
2. Stir in 8 the white wine and reduce by 3/4.
3. Stir in the Demi and tomatoes.
4. Simmer for 5 minutes, do not strain and serve garnished with chopped parsley.
