CLARIFIED

BUTTER

 

Ingredients:

1#              Butter, cubed

 

Procedure:

 

1. Cut pound of butter into cubes and place in small pot. Heat over medium heat or so being careful not to let butter simmer.

 

2. While it melts it will begin to foam. As it does remove this foam and other impurities from the surface. For best results, when all foam and scum is removed laddle through fine chinois line with cheesecloth.
