1 qt Tomato Sauce
6 oz Onion, finely diced
4 oz Celery, thinly sliced
1 tsp Garlic, minced
1 fl oz Oil
1 Bay Leaf
Pinch Thyme, fresh, minced
4 oz Green Pepper, finely diced
Dash Sriracha Sauce (or other hot sauce)
1. Sauté onion, celery and garlic in oil until aromatic.
2. Add tomato sauce, bay leaf and thyme and simmer for about 15 minutes or so.
3. Add green pepper and a dash of sriracha sauce and continue simmering for another 15 minutes.
4. Remove bay leaf and season to taste with salt and pepper.
