CRISPY POPPY ROASTED VEGETABLES
1 # Potatoes, good ones for baking of your choice
1 # Sweet Potatoes
11 oz Baby Carrots
6 Pickling Onions
1/3 cup Olive Oil
2 Tbsp. Poppy Seeds
6-7 oz Brie, thinly sliced
1/3 cup Orange Dressing
1. Peel parsnips and remove tip and butt. Cut in four equal parts. Large dice sweet potatoes, halve the onions and wash the baby carrots stalks intact.
2. Preheat oven to 400 degrees Fahrenheit.
3. Toss the vegetables in oil and place in large baking dish. Bake for about 15 minutes or so ... until vegetables are crisp.
4. Remove and sprinkle poppy sides. toss and coat with dressing. Arrange brie on top and serve while still warm.
