2 #            Pork Loin


1/4 cup    Garlic, chopped

1 Tbsp.     Bl. Pepper

1 Tbsp.     Cumin, ground

1 tsp.        Salt

1/8 tsp.     Cayenne

2 Tbsp.     Vegetable Oil

1 cup        Orange Juice



2 Tbsp.    Vegetable Oil

1/2 Cup   Onion, medium dice

1/2 Cup   Celery, medium dice

1/2 Cup   Green Pepper, medium dice

1/3 Cup   Black Beans, soaked and drained

1.5 Cup   Chicken Stock

1. Mix rub and apply and marinade for about an hour.


2. Heat oil in a pan and sear meat before placing in a preheated 375 F. oven to roast till about 150 F. or 160 F.


3. Meanwhile deglaze pan with orange juice and save for sauce. Heat oil in a pan and cook veggies for sauce for about 5 minutes or so. Once soft add stock and beans to simmer for about an hour. Once tender add deglazing liquid and season.


4. Puree half of bean mixture and recombine, bring back to a simmer and finishing seasoning.


5. Remove loin and let rest for about 10 minutes before slicing and serving with sauce.
