DASHI BROTH

 

Ingredients:

1.25 cups  Dashi

4 Tbsp.      Mirin

4 Tbsp.      Sake

4 Tbsp.      Soy Sauce, dark

3/4 cup      Bonito flakes, dried

2                Scallions, whole, finely sliced

 

Procedure:

    

1. Pour dashi, mirin, sake and dark japanese soy sauce in a small saucepan and bring it to a simmer.

    

2. Remove from heat and stir in bonito flakes. Allow to infuse for a minute or so and strain.

    

3. Stir in scallions and use immediately.
