SW SCRAMBLED EGGS
8 fl. oz. Whole milk or heavy cream
TT Salt/Wh. Pepper
1 Tbsp. Olive Oil
4 oz. Spicy sausage of choice, cooked
1/4 cup Green chile fine diced or chopped
1/2 cup Tomatoes medium diced
1/4 cup Pepperjack cheese, shredded
1/4 cup Onion, fine diced
1. Mix eggs and milk or cream with salt and white pepper and reserve.
2. Heat the oil in a saute pan and saute sausage through then add chiles and tomatoes and cook for another minute or two.
3. Add egg mixture to pan and stir completely with a wooden spoon or rubber spatula.
4. When the eggs begin to cook add cheese and onion and continue cooking until cheese is melted and eggs are set to your liking.
