GARLIC CHIPS

 

Ingredients:

5 heads     Garlic, elephant heads

Enough     Olive Oil

TT              Salt, Kosher

 

Procedure:

  

1. Remove skin from garlic.

  

2. Using a very sharp pairing knife or mandolin slice garlic into thin chips.

   

3. Fry in oil over medium to high heat until golden or lightly brown.

   

4. Remove chips to absorbent paper towels and serve same day.

   

5. You may strain and reserve the oil for future use as it now has a good garlic flavor to it.
