GREEN CHILI MUSTARD

 

Ingredients:

3 oz.          Dry Mustard

6 fl. oz.      XX Beer, dark

6 fl. oz.      Sherry Wine Vinegar

12               Yolks

1/2 fl. oz.  Soy Sauce, dark

1 cup         Chiles, green and small diced

1-2              Jalapeno, minced

1 oz.           Cumin Seeds, toasted

2 Tbsp.      Mexican Oregano

4 oz.           Honey, tupelo is available

1.5 tsp.       Salt

Procedure:

1. Mix together the mustard, beer, vinegar, yolks and soy sauce until uniform and let refrigerate for an hour or two.

    

2. Whisk over a double boiler until thick and creamy then mix in the green chiles, jalapeno, cumin oregano and honey. Mix in salt to taste.

 

3. Adjust any final seasonings and refrigerate until needed.
