LOBSTER CRAYFISH BUTTER

Ingredients:

1 #              Butter, unsalted

8 oz.           Lobster or Crayfish meat, cooked

Procedure:

1. Grind meat with butter. This is most easily accomplished with a paddle in a mixer but you can even do it by hand.

 

2. Put into sauce pan and clarify butter.

 

3. Reserve and refrigerate for later use.
