MANGO CHUTNEY

Ingredients:

2 #            Mangos, peeled and diced

4 oz.         Onion, sweet, fine diced

2 cloves    Garlic, minced

8 fl. oz.     Vinegar, cider

8 oz.         Sugar, brown

2.5 oz.      Raisins, golden

4 oz.         Ginger, crystalized

1/2 tsp.     Salt

2               Cinnamon sticks

1/2 tsp.     Red Pepper Flakes

1/2 tsp.     Mustard Seeds

1 tsp.        Ginger, fresh and minced

1 fl. oz.     Lime juice, freshly squeezed

Procedure:

1. Place all of mangos, onion, garlic, vinegar and sugar in an appropriately sized, heavy bottomed (if possible) saucepan and cook until all the sugar has dissolved.

  

2. Stir in the raisins and ginger and salt and spices with wooden spoon until onions and raisins are soft. This will be about oooooooooh, 45 minutes or so. As foam rises to surface skim as necessary.

  

3. Stir in the lime juice, taste, season, taste.

  

4. Remove from heat and let cool uncovered. When cool refrigerate. It will thicken slightly but not all too much.
