MILANAISE SAUCE

Ingredients:

1 qt            Tomato Sauce

5 oz           Mushrooms, sliced

1/2 oz        Butter

5 oz           Ham of choice, cooked and cut julienne

5 oz           Tongue, cooked and cut julienne

Procedure:

 1. Gently saute mushrooms in butter until tender.

  

2. Add tomato sauce, ham and tongue. Bring to simmer for 10-15 minutes.

  

3. Season to taste with salt and pepper.
