Ingredients:

1 qt             Bechamel Sauce

4 fl. oz.       Heavy Cream

6 oz.           Crayfish butter

as needed  Paprika

as needed  Crayfish meat

Procedure:

1.   Warm bechamel and add scalding cream. Swirl in crayfish butter. Finish by adding paprika for color. Garnish at service with crayfish meat.
