ORANGE CRAISEN RELISH

Ingredients:

1 #           Sugar, granulated

4 fl. oz.   Orange Juice

8 fl. oz.   Water

1.5 #       Craisens

1             Cinnamon Stick

1 Tbsp.   Nutmeg

2 tsp.      White Pepper

TT           Salt

2 fl. oz.  Orange Liqueur or Triple Sec

2 Tbsp.   Orange Zest, finely grated or chopped

20           Orange Segments

Procedure:

1. In a nonreactive saucepan bring sugar, OJ and water to light boil.

   

2. Add craisens, cinnamon stick and nutmeg. Simmer for about 15 minutes, until craisens begin to burst. Skim surface of foam as necessary.

   

3. Add orange liqueur (or triple sec) and orange zest and continue simmering for about 5 minutes.

   

4. Remove from heat, remove cinnamon stick and add the orange segments. Cool uncovered completely then reserve in refrigerator until service.
