3 cups Olive Oil, extra virgin of choice
6 oz Pine Nuts
12 oz. Basil leaves, fresh
2 Tbsp. Garlic, finely chopped or minced
8 oz. Parmesan Cheese, grated
8 oz. Romano Cheese, grated
TT Salt and White Pepper
1. It is preferable to blanch and shock the basil first. Pat dry if you so choose to do so.
2. Pour about a third of the oil into a food processor or blender and add the rest of the ingredients.
3. Blend until smooth. Once uniform incorporate the rest of the oil slowly. While continuing to blend.
4. By slowly I just mean don’t dump it all in at once, pour it in but not like really slowly... ya know?
