PIQUANT SAUCE

Ingredients:

1 qt.            Demi-Glace

1 oz.            Shallots

4 fl. oz.       White Wine

4 fl. oz.       White Wine Vinegar

2 oz.            Cornichons

1 Tbsp.        Tarragon, fresh

1 Tbsp.        Parsley, fresh

1 Tbsp.        Chervil, fresh

Procedure:

1. Stir wine, vinegar and shallots together in pot and reduce by two thirds.

 

2. Stir in Demi and simmer for about 10 minutes.

 

3. Rip herbs and stir in with cornichons. Stir and simmer for another minute or two.

 

4. Taste, season, taste and serve without straining.
