POTATO PANCAKE

Ingredients:

1 #             Chef Potatoes

1                Egg

1                Yolk

2 oz.          Onion, minced

1 oz.          Flour

1/2 Tbsp.   Baking Powder

TT              S/P

TT              Nutmeg

Procedure:

1. Peel and coarsely grate potatoes.

  

2. Beat egg and additional yolk.

  

3. Transfer potatoes and eggs to a bowl and add flour, onions and baking powder. Season with nutmeg and S/P. Blend well.

   

4. Heat oil while forming potato mixture into uniform sized pancakes. Panfry until tender turning only once when well browned on first side.

   

5. Drain and serve.
