ROASTED GARLIC

Ingredients:

4                Garlic heads

2 fl. oz.      Clarified Butter or Olive Oil

TT              Dried or Fresh herbs or spices

TT              Salt/Wh Pepper

Procedure:

1. Slice tops off of each head of garlic and place, cut side up on baking sheet or in appropriate sized hotel pan.

  

2. Drizzle clarified butter or olive oil over heads of garlic and season to taste with salt pepper and desired herbs and spices.

  

3. Roast at 300 F. covered for about an hour, until soft. Uncover and continue to cook for 15-20 minutes.
