ROBERT SAUCE

Ingredients:

1 qt.           Demi-Glace

8 oz.          Onion, chopped

1 oz.          Butter

8 fl. oz.      Dry White Wine

2 tsp.         Dijon

1 Tbsp.      Sugar

Procedure:

1. Sauté onions in butter until translucent. Stir in the dry white wine and reduce by two thirds then stir in Demi.

   

2. Simmer for about 10 minutes or so.

   

3. Strain through chinois or mesh strainer and stir in dijon and sugar until uniform.
