1 gal Chicken Veloute
8 oz Mushroom trimmings
1 qt. Heavy Cream
TT S/Wh. Pepper
1. It is a simple and satisfying sauce eve nif you don’t like mushrooms :)
2. First go ahead and reduce the sauce by 1 fourth with mushroom trimmings.
3. Once properly reduce slowly whisk in the heavy cream.
4. Adjust with salt and white pepper.
5. Once to taste strain through a chine cap, strainer or whatever lined with cheese cloth (if available:).
