TOMATO CONCASSE

Ingredients:

4 Ea.     TOMATOES 

Procedure:

 

1. Boil Water and set ice bath to the side. Cut an X on the bottom of each tomato and core out the top with a sharp paring knife.

  

2. Drop in boiling water and let simmer until skin begins to peel off tomato according to the the X. Once the flesh of the whole tomato is loose remove tomatoes with slotted spoon to ice bath. let cool off and remove to bowl. Peel off skin with pairing knife if necessary.      

  

3. Cut in half and squeeze out seeds.

  

4. Dice halves according to need if dicing is even needed.
