TOMATO KETCHUP

Ingredients:

3.5 oz.       Sugar

3 oz.          Onion, minced

1 Tbsp.      Garlic, minced

96 fl. oz.   Crushed Tomatoes

2                Red Peppers, roasted, chopped

8 fl. oz.     Vinegar, Red wine

4 fl. oz.     Balsamic vinegar

TT             Cayenne

Procedure:

 

1. In an appropriately sized heavy sauce pot cook sugar until it is an amber color. Stir in onion and garlic then add tomatoes and peppers and continue cooking for another 5-10 minutes over a medium heat.

  

2. Add the vinegars and reduce over a medium heat for about 20 minutes or until desired thickness is reached. Add cayenne to taste.

  

3. Strain through a sieve and reserve in appropriate container for up to 2 weeks in refrigerator.
