VEGETABLE SOUP (CLASSIC)

Ingredients:

1 oz.          Butter

10 oz.        Mirepoix, small dice

2 oz.          Turnip, small dice

1 clove      Garlic, chopped

2 oz.          Green beans

1 oz.          Peas

2 oz.          Corn

4 oz.          Tomato Concassee

1                Bouquet Garni

Procedure:

 

1. In soup pot sweat mirepoix and turnip in butter or fat until tender.

  

2. Add garlic and saute lightly.

  

3. Add stock.

  

4. Simmer about an hour.

  

5. Add tomato concassee and continue simmering for about 10 minutes skimming as necessary.

  

6. Taste, season, taste and serve.
