YELLOW PEPPER KETCHUP

Ingredients:

2 #            Yellow Peppers, seeded and chopped up   

3 oz.         Jalapeños, seeded and chopped up

12 oz.       Onions, chop chop chop

2/3 oz.      Garlic, chopped

6 fl. oz.     Vinegar, red whine

5.3 oz       Sugar

TT             Salt/Wh Pepper

Needed     Vegetable Oil

Procedure:

 

1. Sauté peppers, jalapenos, onions and garlic in oil until soft and tender but careful not to brown, 10-13 minutes.

 

2. Stir in vinegar, sugar and simmer for about 30-45 minutes.

  

3. Puree in a food processor until smooth and season to taste with salt and white pepper.

  

4. Transfer to tupperware or jar and refrigerate for up to 2 weeks.
